Ingredients:
- 2 and 1/2 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 and 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- Cream cheese frosting (recipe below)
For the cream cheese frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (180°C) and grease two 9-inch cake pans.
- In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
- In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar.
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix the batter.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cakes cool completely before frosting.
- To make the cream cheese frosting, beat the cream cheese and butter together until smooth. Gradually add in the powdered sugar and vanilla extract, and beat until the frosting is light and fluffy.
- Once the cakes are completely cool, spread a layer of frosting on top of one of the cakes, then place the second cake on top. Spread the remaining frosting on top and around the sides of the cake.
